Sprouted Hummus


I really like, no, I LOVE hummus! Since it's so unbelivable versatile, you can use it as a dip for crisp crudités, as a spread or even as a filling for (raw) wraps and tortillas.
Today I'd like to share the basic recipe for RAW, sprouted hummus with you. You're welcome to give free reign to your creativity and add freaky spices or maybe some lemon zest or dried tomoatoes.

Ich mag, nein, ich LIEBE Hummus! Da es so unglaublich vielseitig ist, kann man es als Dip für knackige Gemüsestifte, als Aufstrich oder auch als Füllung für (rohe) Wraps verwenden.
Heute möchte ich euch gerne ein Grundrezept für roher Hummus aus gekeimten Kichererbsen vorstellen. Hier könnt ihr eurer Kreativität freien Lauf lassen und mit ausgefallenen Gewürzen experimentieren, oder vielleicht gebt ihr etwas Zitronenabrieb oder getrocknete Tomaten hinzu---
Das Rezept ist wirklich denkbar einfach...also, worauf wartet ihr noch? ;) 

250g sprouted chickpeas (sprouted for about 3 days)
2 Tbsp. sesame seeds
2-3 Tbsp. virgin olive oil
2-3 Tbsp. fresh lemon juice
2-3 cloves of garlic
1,5 teasp. sea salt
1 teasp. each of bell pepper powder and harissa (or which spices you wish)

First, grind the sesame seeds.
Now, simply blend together all ingredients and add sea salt and spices to taste. If the mixture seems to be too firm, just add some water, until it becomes spreadable. That's it!


250g gekeimte Kichererbsen (ca. 3 Tage gekeimt)
2 El Sesamsamen
2-3 El natives Olivenöl
2-3 El frischer Zitronensaft
2-3 Knoblauchzehen
1,5 Tl Meersalz
je 1 Tl Paprikapulver und Harissa 


Die Sesamsamen fein mahlen. Alle Zutaten im Mixer oder mit dem Pürierstab zu einer „streich – oder dipfähigen“ Paste verarbeiten. Gut mit Gewürzen abschmecken. Sollte das Ergebnis noch zu fest sein, einfach etwas Wasser hinzugeben und nochmals gut pürieren.
Mit etwas Paprikapulver und (falls vorhanden) Chillifäden garnieren. Fertig!

Raw Chocolate "Cheesecake"

Hello again!

For the opening of my "Rawgreenkitchen" I'd like to share a first recipe with you!
It is a wonderful chocolate cake which does absolutely satisfy your sweet tooth!
The texture is quite creamy, still crunchy due to the chocolate topping. Somehow I found myself eating up nearly the whole cake but luckily I could save a few pieces for my test eaters, who were as delighted by the treat as I was.
But now I will stop just describing it to you, here is the recipe!

Hallöchen!
Zur Eröffnung von "Rawgreenkitchen" würde ich euch gerne das erste Rezept vorstellen!
Es handelt sich um einen wundervollen Schokoladenkuchen, der sämtliche "Süß- Gelüste" stillt!
Seine Konsistenz ist recht cremig/ zartschmelzend, aber dennoch knackig durch das Schokotopping. 
Irgendwie habe ich  den ganzen Kuchen fast alleine verspeist, konnte aber im letzten Moment noch ein paar Stücke für meine Testesser retten, welche ebenfalls schlichtweg begeistert waren! ;)
So, genug beschrieben, hier kommt das Rezept!


For the crust:
4 Tbsp. almonds (or hazelnuts, walnuts)
1 Tbsp. raw cacoa beans
5 large, pitted dates (preferably Medjool dates)

Filling:
200g (about 1,5 cups) cashews, soaked for about 8h
1,5 Tbsp. coconut oil
1 Tbsp. almond butter
2 teasp. raw cacoa powder
1 Tbsp. raw cacoa beans
4-5 Tbsp. honey or raw agave nectar
1 dash of sea salt
1 Tbsp. lucuma powder (optional)

Topping/sauce:
2 Tbsp. coconut oil, melted
1 Tbsp. almond butter
2 teasp. raw cacoa powder
1,5 Tbsp. honey or raw agave nectar

How to prepare?
For the crust, grind all ingredients in a food processor, until it becomes a sticky "dough".
Put into a graesed springform-pan (14cm) and kind of spread it with your hands oder a (wet) spoon.
For the filling, blend everything in a blender, except for the coconut oil and cacoa beans, until smooth. Melt the coconut oil with help of a double boiler, taking care of the temperature (shouldn't get warmer than 42°C). Now grind the cacoa beans, and add both to the cashew mix and bled again.
Pour the mixture onto your crust and smooth it down.
Put the pan into a freezer for at least 5h, or overnight.
To prepare the sauce, simply mix the melted oil with the remaining ingredients and pour everything on the chilled cake (any pattern you wish).
Enjoy immediately or stick into the freezer once again!
Store leftovers (which leftovers?!) in the freezer up to a month.


Boden:
4 El Mandeln (alternativ Wal- oder Haselnüsse)
1 El Kakaobohnen
5 Datteln (Medjoul) 
 
 Füllung:
 200g Cashews (eingeweicht)
1,5 El Kokosöl
1 El Mandelmus
2 Tl Kakaopulver
1 El Kakaobohnen
4-5 El Honig/ roher Agavensirup
1 Prise Salz      
1 El Lucumapulver (optional) 


Schokosauce:
2 El Kokosöl
1 El Mandelmus
2 El Kakaopulver
1,5 El Honig/ roher Agavensirup

Zubereitung:

Für den Boden alle Zutaten im Mixer zerhächseln, bis eine klebrige, gut formbare Masse entsteht. Die Springform mit Frischhaltefolie auslegen und die Teigmasse am Boden festdrücken.
Für die Füllung alle Zutaten bis auf das Kokosöl und die Kakaobohnen in einem starken Mixer pürieren. Das Kokosöl im lauwarmen Wasserbad verflüssigen und die Kakaobohnen fein mahlen. Beides zur Cashewmasse geben und pürieren, bis eine homogene, cremige Masse entsteht.
Diese dann auf den Boden geben und die Oberfläche glattstreichen.
Für mindestens 5 Stunden (oder einfach über Nacht) in die Gefriertruhe stellen.
Für die Schokosauce das Kokosöl (wie oben beschrieben) verflüssigen und mit den restlichen Zutaten vermischen.
Schokosauce (als beliebiges Muster) und Kakaonibs über den Kuchen geben und genießen!
